Whether you call it Maitake, Hen of the Woods, Sheepshead, or Bill, Grifola frondosa is a sought-after mushroom with many names. It doesn’t seem to get the hype that morels and others do, but it is, in my opinion, one of the best tasting, most versatile, all-around great mushrooms.
