Whether you call it Maitake, Hen of the Woods, Sheepshead, or just Bill, Grifola frondosa is a sought-after mushroom. It doesn’t seem to get the hype that morels and others do, but it is, in my opinion, one of the best tasting, most versatile, all-around great mushrooms.
